salmon & poppyseed salad

Sometimes, you want something delicious & you want it in under 10 minutes. It's as simple as that. Realistically, when you're starving... if you don't act fast then the entire contents of your fridge can be devoured in the time it takes you to throw together a meal. At that point, was throwing together a meal even worth the energy?
Here's the good news. You can buy those wonderful packs of pre-mixed salad, a pack of smoked salmon, & then make your own delicious poppy seed vinaigrette, and voila! You've got something mouth-watering, filling & completely satisfying in no time at all.
Seriously, try it.
Ingredients: (this should serve two, I eat the whole lot on my own though... just saying)
- 100g smoked salmon - 250g fresh cut, pre mixed salad. (The bags with radicchio work the best) - 2 tbs olive oil - 2 tbs lemon juice - 1 tbs honey - 1 tsp balsamic vinegar - 1 tsp english mustard - 1 tbs poppy seeds - salt & pepper to taste
Directions: 1. combine the oil, lemon juice, honey, vinegar, mustard, salt & pepper in a glass or small bowl & emulsify the mixture, then add in the poppy seeds & give it a good stir. 2. in a large bowl, toss in your chopped salad. Then, slice up your smoked salmon into bite sized pieces & disperse it on top of the salad mix. Drizzle over your vinaigrette & enjoy!!!
