dark chocolate, cheesecake brownies

Do bikers say "bestie"? Is that allowed? Do I say "bestie"?! I'm not even sure. What I am sure of is that I've been asking my sista-from-another-mista for a movie & cuddle date, and I want to give her brownies. I mean, I'm the one who wants the brownies of course, but I also want to share them with her.


So, I revisited an old recipe, and upon looking at it, decided I could significantly improve it. I'm adding it here more as an inventory for myself, since this site goes so unused these days I doubt anyone other than me will be reading this.


Ingredients: – 180g unsalted butter – 200g castor sugar – 100g light brown sugar

- 400g dark chocolate

- 50g milk – 5 large eggs

– 1 tsp vanilla – 1/2 tsp salt

– 100g dark cacao – 200g gluten free white flour – 60g walnuts

- 300g cream cheese


Directions: 1. preheat the oven to 170C. Grease & line a 20cm x 30cm baking tin with parchment paper & set aside. 2. place the butter, sugars, chocolate & milk into a pot, and on the lowest heat setting, stir until all the chocolate & butter is melted, and most of the sugar feels as if it has dissolved. 3. remove the mix from the heat, and add in the eggs one at a time, whisking thoroughly between each until it is thoroughly incorporated into the batter, followed by the salt & vanilla. 4. transfer one cup of the batter into another bowl, and add the cream cheese to it. Whisk it thoroughly & set it aside. 5. In the first bowl, add the flour & cocoa, and whisk until just combined. Then the walnuts, folding the batter until they are incorporated. 6. transfer the batter into your prepared baking tin & then drizzle the cream cheese mix on top. Using a spoon, drag it through the batter so that you create rivets where the two batters combine and blend in a swirling pattern.

7. Bake in the oven for 40-50 minutes. The brownies are done when the batter is set & a knife can be inserted into the middle & only a few moist crumbs stick. Remove from the oven & allow to cool before cutting.
